About:

WHAT WE WILL MAKE:

  • Fresh egg pasta dough from scratch.
  • Tagliatelle, ravioli and tortellini.
  • Spinach and ricotta filling (other fillings available on request).
  • A sauce to accompany your pasta (this will vary according to the best seasonal products available and your dietary requirements).

Description:

In this hands-on class, we’ll teach you the secrets to making pasta dough from scratch and shaping the perfect tagliatelle, ravioli and tortellini. Immerse yourself in real Italian cooking culture and pick up all the secrets to successful pasta making!

The workshop will be a mix of individual work, work in pairs and demonstrations. At the end of the class, you’ll sit down to enjoy your delicious homemade pasta dressed with a brown butter, sage and parmesan shaves sauce (other sauces also available on request).

  • How to choose the right ingredients for perfect pasta dough and how to make variations of it.
  • The technique to get a smooth and silky texture.
  • How to use a pasta machine to roll out and shape fresh pasta.
  • How to shape tagliatelle by hand and using a pasta machine.
  • How to handle pasta dough to make different shapes by hand.
  • Some great ideas on different fillings and sauces to pair with them.
  • How to cook and store fresh-filled pasta.

  • All the ingredients and equipment you need to make some delicious pasta, including an apron for you to wear during the class.
